DOTP Favorite!! Cha Cha Chipotle Pork Tacos!

This was our first meal when DOTP came back from summer break this Fall, and we still have people bring it up wistfully, so we figured it was time to revisit this awesome dinner.    

Tuesday, February 8th:
Cha Cha Chipotle Shredded Pork Soft Tacos
Smashed Borracho Beans
Chips & Chile con Queso, Salsa & Sour Cream
Southwestern Salad with Homemade Chipotle Ranch Dressing
Vegetarian Option:  Grilled Veggies in place of pork)
Kids' Option:  Large Cheese Quesadilla ($5)
Dessert:  Homemade Graham Crackers - Cinnamon & Chocolate Dipped!! (5)
Get You Through the Week:  Thai Curry with Red Peppers & Rice Noodles ($15 eggplant version, $20 with chicken)

I really love shredded pork, but, being that I'm from Texas, I can't comment on the whole shredded pork barbeque phenomenon y'all have going on here.  I don't want to let a little thing like a barbeque feud get in the way of our relationship, so let's just say that there is more to barbeque than shredded pork, and there is more than one way to eat shredded pork, and we'll leave it at that. 

Cha Cha Chipotle Pork is so good you'll be eating it before it even gets onto your plate.  Not too spicy, flavorful and tender - yum!  In addition to being tasty, this is a great family dinner since everyone can make up his or her own plate just the way he or she likes it.  My kids are so much more likely to eat dinner if they feel like they got to put exactly as much meat or cheese or salsa on as they like.  You'll just serve all the components and let each family member load up his or her soft tacos with beans, shredded pork, salsa, cheese, and anything else you can think of!  You may prefer lots of jalapenos, while your kids go in for meat and cheese only - whatever, the point is that everybody's happy.  You can add family favorites like black olives, hot sauce, lettuce, cheese or onions on top of all the great sides we'll bring you.

Now, as modest as I like to think I am, I'm going to tell you that you will be thinking about my chile con queso after it's all gone.  It is really, really addictive, so it's probably for the best that you don't have the recipe.  You can eat it before dinner with chips, on your tacos, on your eggs the next morning, or just straight out of the container with a spoon - we won't tell anyone!  

I always like a salad with dinner, just so that everyone sees a little green on the table, even if they refuse to eat it!  The Southwestern Salad is simply but delicious - fresh veggies and lettuce with our homemade Chipotle Ranch Dressing - it's spicy, so have a cold beer on hand if you can't handle the heat (or even if you can - dinner is always better with a cold beer!).

I'm very excited about our dessert this week - Homemade Graham Crackers.  We'll give you a combo of Cinnamon & Dark Chocolate Dipped, just to get you in the mood for Valentine's Day.  Heart-shaped and lightly sweetened with honey and brown sugar, these crispy cookies are just right after dinner, or in your sweetheart's lunchbox.

I'm hoping that y'all have been enjoying our new Get You Through the Week Meals!  It's so nice to have  dinner in your back pocket on a night when everyone comes home tired from school, work, sports, dance, etc and just wants to eat and relax.  This week's GYTTW meal - Thai Curry is so good - I made it a few weeks ago for my family and it was a big hit with everyone - such a rare surprise in my house!  It's a very mild red curry & coconut milk base with veggies and chicken or eggplant.  You'll get a package of dry rice noodles to complete your easy, healthy, delicious dinner.
