South of the Border Summer Fun

Thankfully, it's not as hot here in Winston-Salem as it is down Mexico way, but it's still pretty dang hot and steamy. I can't think of anything better than fresh, delicious Mexican chicken salad tacos to cool everyone off.

Tuesday, July 12th:
Chipotle Chicken Salad Tacos (serve as a salad or in tortillas)
Corn & Black bean salsa
Chile con Queso & chips
Vegetarian option: Squash & Mushroom Tacos
Kids' Option: Cheese & Chicken Quesadilla ($6)
Dessert: Exploding (with PopRocks!) Sugar Cookies ($6)
Get You Through the Week: Thai Green Curry with Chicken & Noodles ($22)

These refreshing Chipotle Chicken Salad Tacos (recipe courtesy of the very talented chef Rick Bayless), are perfect for composing your own perfect taco dinner!  The slightly spicy, tangy chicken salad is great in corn tortillas or over a bed of lettuce (we'll give you both!), so everyone in the family can make up his or her own mind on the matter.

You can add the Corn and Black Bean Salsa right on top, eat it with chips or just eat it right out of the bowl.  We're making a farm run to pick up fresh, local corn for the salsa because we just think it's not summer without farm fresh corn & veggies.  

And I know there are some of you who will be ordering dinner this week just so you can your hands on some Chile con Queso.  Some people might think that makes you a little bit crazy, but we just think that makes you family.  And speaking of family, we have heard that there are some people who will not share their queso with their own children, and we're just not sure what to say about those folks, but we know we admire their passion for queso!

For dessert, we know that July 4th has come and gone, but over at our house we were a little disappointed with the rained-out fireworks situation, so we had to make our own - with food!  We can't think of a better way to keep the fun of the 4th going than topping Sugar Cookies with icing and PopRocks, and I'll bet they'll be a pretty big hit at your house too!

We were getting a little tired of making casseroles for the GYTTW meals (even though they are, we admit, the perfect one-dish dinner), so we're rolling out a favorite family meal - Thai Green Curry with Chicken.  I seriously could eat Green Curry three times a week, though that would not leave much room for all the Mexican food I also like to eat ...  In any event, we were inspired to make it this week when we heard that our new farmer friend had a bounty of Japanese eggplants all ready for us.  I love to use whatever is fresh and in season, so get your taste buds ready for action!

That's all friends!  I hope your summer is going great and you're staying cool and relaxed!  Not cooking will certainly help with that, but we also suggest plenty of frozen drinks and occasional naps in hammocks.
