Welcome back, DOTP family! We are excited to be back for a new season of menus - some completely new and some old favorites.
We're starting things off with a little Mexican fiesta dinner. It's been a few months since I've been home to Texas to have my fix, and if you're like me, you might be getting a little cranky if you've gone too long without Mexican food. While this meal is in no way as satisfactory to me as a greasy combination platter and a few frozen margaritas, I think it will be more than tasty enough to keep major Mexican food depression in check!
Tuesday, September 13th:
Cha Cha Chipotle Pork Tostadas
Tostada Fixin's (refried beans, cheese, sour cream)
Corn, Avocado & Red Pepper Salsa with Feta
Living Lettuce & Homemade Jalapeno Ranch Dressing
Vegetarian Option: Mushroom & Zucchini Tostadas
Optional Extra: Mimi's Famous Chile con Queso (16 oz container $6)
Kids' Meal: Plain Shredded Pork Soft Tacos ($6)
Dessert: Killer Chocolate Cupcakes with frosting in the middle! ($6)
Get You Through the Week: Goat Cheese & Italian Sausage Lasagna ($22, or vegetarian with mushrooms & spinach, $22)
Cha Cha Chipotle Pork is a DOTP favorite, and with good reason! The meat is so tender and flavorful, a little spicy and so versatile. This time, we're serving it with tostadas (basically a big, flat crispy taco) so that everyone can pile up a tostada with whatever combination of tasty toppings makes you smile - the DIY Dinner Deluxe!
We're also including a head of our favorite summer item - Living Lettuce! You can make a little lettuce wrap instead of a tostada, make a whole salad with the Homemade Jalapeno Ranch Dressing, or just top your tostada with it. As a side note, we have found that even salad-hating kids love to tear off pieces and munch on it like rabbits - bonus!
We have served variations on our Corn Salad many times, and it's always a hit. This time we're combining it with avocado, feta and fresh red peppers - pretty hard to beat. You can add it to your tostada, mix it up with lettuce, or just eat it by itself.
Even though this meal will be plenty of food for your family, I personally hate to think of any of you going without Chile con Queso. I have to have some every now and then, so I'm planning on making a big batch this weekend. If you find yourself in need of some too, let me know and I'll make you your own - you can decide whether or not to share!
Our Get You Through the Week Meal this week - Goat Cheese Lasagna - is the kind of comfort food everyone in my family loves! It's a traditional lasagna with a little twist of goat cheese and flavorful Italian sausage. The familiarity of lasagna for the kids mixed with a little sophistication for the grown-ups makes this one of my favorite family meals, and it is so good with some crusty bread and a big glass of red wine. I promise it will make your night to just take it out of the freezer, throw it in the oven, and have a great dinner ready to go an hour and a half later (especially if you plan ahead and have wine on hand!). It's also a great thing to keep in the freezer for bringing to a friend in need of dinner.
This week we're so excited to introduce our new baker - Eva Wu! Even though Eva has her own marketing company, Bridge Marketing Professionals, she has some major culinary stripes, including having been the chef for a fraternity. I would hope that baking for DOTP will compare favorably with that experience, but one never knows! In any event, we have been sampling her treats, and they are the bomb! (We had to do lots of taste tests!)
For her first week, she's making these Killer Chocolate Cupcakes, and they are awesome! It's a gooey, rich chocolate cupcake filled with chocolate chip cream cheese icing - so no mess, just very, very delicious!
(By the way, if you're wondering what happened to Caroline, we tearfully said good-bye to her at the end of the summer and allowed her to return to her own family, even though we preferred to keep her locked up in the DOTP cellar making Homemade Oreos for us!)
