May Day Israeli Couscous & Cinco de Mayo Fiesta

This Tuesday is May Day - can you believe it!?  I always feel like May is a month of great excitement - end-of-year school projects, picnics, spring sports, swim teams, and recitals - but also of stress - see previous list!  All of the fun starts to feel a bit manic and overwhelming, and it can be hard to find a minute to just sit down across the table from your own family and spend an hour catching up.  I know that when I look at my family calendar for this coming month, there's not very much white space (and only partly because Ruby attacked it with a Sharpie).  So hopefully, DOTP can be a little calm moment in the midst of a wonderfully festive, but busy, season of life.

Tuesday, May 1st:
Homemade Hummus - Plain or Sriracha (spicy) - with pita bread
May Day Israeli Couscous with Smoked Chicken and Veggies
Spinach Salad with Homemade Basil Balsamic Dressing
Vegetarian Option:  May Day Israeli Couscous with Kidney Beans & Veggies (no charge)
Gluten-Free Option:  Quinoa with Smoked Chicken & Veggies (one quart, $8)
Low Carb Option:  Smoked Chicken and Mixed Veggies (one quart, $8)
Kids' Option:  Orzo Pasta with Marinara & Cheese and side of Baby Carrots ($6)
Dessert:  Camino Bakery Pecan Bars (5 small bars for $6)
Get You Through the Week:  Cinco de Mayo Fiesta Taco Feast ($25, $50, or $75 - see details below)

I can't seem to remember when I first discovered the joys of Israeli Couscous, but once I discovered it, I have been hooked.  It's so fun to mix with almost anything - this week we're adding tender smoked chicken, kalamata olives, feta cheese and lots of spring veggies, all tossed together in a delicious, fresh sauce.  The whole meal is healthy and fun to eat - we've heard lots of parents who can't believe that their picky kids love to eat it!  Once you've had your fill for dinner, you'll hopefully have left-overs for lunch the next day - it's great over fresh lettuce or spinach!

Our Homemade Hummus is always a hit, and this week we're zesting it up a little with a bit of our favorite spicy hot sauce - Sriracha.  If you don't like the spice, just let us know and we'll keep it Plain Jane for you - it's great either way!

This week's dessert is one of my favorite Camino treats - Pecan Bars!  They are very rich and chewy, and I'm always thinking that since nuts are so healthy, it's not really so bad for you, am I right?

Finally, I'm very excited about our GYTTW concept this week!  We've got a whole Cinco de Mayo Fiesta planned for you, so I'm hoping you'll call up some friends and get something going to celebrate.

Here's the deal:  We could not decide which of our fabulous Mixed-up Taco Bake Fillings would be better - Chipotle Chicken Sausage & Wheatberry Bake or Chicken & Sweet Vidalia Onion and Rice Bake.  They are both so good - you bake the pan until it's all warm and the cheese is melted, then you scoop it into soft flour tacos, top it with our delicious Homemade Guacamole and you will be in Taco Heaven (are you a True Believer?!).  We are happy to make vegetarian versions of these casseroles as well.

So your choices are as follows:

  • Fiesta Package $50 - one pan of each casserole, tortillas, guacamole & chips 
  • Mini-Fiesta $25 - one pan of either casserole (you choose) & tortillas
  • Grande Fiesta $75 - one large pan of each casserole, tortillas, guacamole, chile con queso & chips
