Our Version of Fair Food!

So, the Dixie Classic Fair is in town, that awesome celebration of all things fried and fattening.  Every year, we take our children, walk around exclaiming over racing pigs, chainsaw dolphins, and baby bunnies.  We ride the rides, lose and find the children a few times, but mostly, we wander from one food opportunity to another, indulging in those once-a-year treats like fried Oreos, elephant ears and frozen lemonade.  It's fun, the kids love it, and by the end, I'm so ready for a healthy meal I can feel it in my bones!

Thus, we give you, DOTP's Fair Week Dinner!

The inspiration for our Warm Salad Special comes from a lovely restaurant in Portland, Oregon called Perry's, and it was always my go-to order when we would go to dinner there. Our version is a delicious mix of warm, fresh veggies like peppers, rosemary roasted potatoes, mushrooms and green beans, flavorful chicken, brisket or portobello mushrooms, served over fresh spinach and topped with blue cheese, croutons & Tomato Tahini Dressing - a yummy new salad dressing we've created.  Of course, we'll serve all of the components separately, so you can add or leave off anything you like!

On the side, we're bringing back a dip that we made a long time ago and then forgot about, which is one disadvantage of not really being very organized business-folk.  On the other hand, an advantage of our business model is that we can wake up with a craving for Rosemary Feta Spread on warm French Bread and decide right then and there that we must have it this week!  So, on the balance, I'd say that's one vote for the more "informal" system of running a food business.

For kiddos who might not go in big for salad dinner, opt for our Secret Ingredient Mac 'n' Cheese. It's really good (you may find yourself sharing a bite!), and no one has to know that the secret ingredient is cauliflower.  I promise not to tell.

So, yes, this meal is an attempt to atone for the excesses of the Dixie Classic, but we can't be saints all the time, right?  One, okay, maybe two, tiny little bites of our Not Very Healthy Toffee Almond Crunch Bar isn't going to kill you.  And, as we all know, research shows that chocolate may actually be very good for you.  I'm pretty sure they don't mean for it to be melted over toffee, on top of graham crackers and sprinkled with slivered almonds and sea salt, but still, there is chocolate in there, and someone did say that about chocolate, so I'm going with it.

Our Get You Through the Week(end) meals this week are awesome & will serve you well as easy weeknight dinners for your family, dishes to take to friends who need a meal, dinners to serve to weekend guests and more!

Our Traditional Cottage Pie is one of my family's favorite:  layers of seasoned ground beef, cheese, vegetables and fluffy mashed potatoes make for a dish that is gone almost as soon as we sit down to eat.  If you're feeding men and boys, particularly, this will be popular!

The Monte Cristo Casserole, I must admit, is a creative endeavor of mine.  As a kid, I had a major infatuation with a particular Monte Cristo Sandwich that our country club used to serve, and I've never been able to find another one quite as good.  If you've never had one, it's a bizarre sandwich concept:  ham and cheese on french toast, fried and then served with raspberry jam for dipping.  Really weird, but totally delicious!  Anyway, as I often do, I found myself thinking about what to do with chicken, and this casserole idea came into my head.  It's chicken, layered with french toast, thinly sliced ham and cheese, and spread with raspberry jam.  I tried it out on my family and also Alex's, and it's a winner all around.  We think you'll like it too!

We've got lots of Optional Extras and Camino Goodies as well this week, so check those out and then let us know what you'd like!

We're looking forward to seeing you on the porch,

Claire & Alex
