I have to say that I am very, very excited about this dinner. If you're wondering why you keep hearing about Hatch peppers, here's the deal. Hatch Green Chiles are grown in New Mexico, and they are so tasty, but they have a short season. In Texas (and elsewhere, but I grew up in Texas, so that's what I know), whenever they are in season, restaurants do special menus around Hatch Chiles. They are spicy, but not too spicy, and flavorful in just about everything. So friends, we here at dinners on the porch didn't want you going through life without your own little Hatch Chile Festival - it just wouldn't be right! Check out this website to see how much fun the actual festival is!

But then I thought, I guess people will want to eat more than chiles for dinner, so what would be tasty? And, actually, I basically just decided that we couldn't do better than to replicate the 4th DOTP menu we ever did way back in September 2010 (!), which is Brisket & Pappy's Mashed Potato Wraps, served with tangy Homemade BBQ Sauce! It it crazy good, and that's no lie.  This is a great meal for dinner, but it's also a perfect leftovers dinner - much better than Thanksgiving leftovers, in my opinion!  

Your dinner will come with flour or corn tortillas, and then you get to be creative. Fill it with brisket, (or mushrooms if you don't want meat), the best mashed potatoes in the world, homemade barbeque sauce - very tangy and delicious, roasted Hatch chiles, a deliciously crunchy Broccoli Salad with Homemade Scallion Bacon Vinaigrette, and anything else you can think of! I love a little hot sauce (of course) and fresh spinach in there, and the kids always like a little ranch dressing on just about everything.

Of course, you can also serve steak and potatoes un-wrapped, if certain people in your family are not big "mixers". On the side, you'll also have a little tasty Chili con Queso to enjoy while you warm everything up - it tastes best with a cold beer!

Keep your week simple by planning ahead for dinner:  our new Beef Queso Enchiladas Rojas are a family-friendly, easy weeknight dinner.  Flour tortillas rolled with seasoned ground beef & cheese, then topped with mild homemade red sauce and Queso - it's our version of comfort food!  If you're a little more adventurous, our Indian Enchiladas are amazing, and you know we hate to brag!  They are so flavorful - they are loaded with spinach and cheese in a mixture of subtle spices (but not spicy at all), then topped with a creamy Mint Cilantro Sauce.  We love!

Our Southwest Chicken or Zucchini Pie is always a sell-out!  It is a one-crust pie (on the top), filled with white meat chicken, roasted corn, edamame, cheese, and a light cream sauce.  It's topped with a pretty lattice puff pastry, so it's a nice dish for a brunch or an easy one-dish dinner.  

If you've got kids all over the place in afterschool activity madness, our Bahn Mi Sandwich Dinner is a good, fast meal to have on hand!  These savory roasted pork & pickled vegetable sandwiches are so flavorful and unique that we hardly ever make it to the table before my family has devoured them.  Send them with kids or grown-ups for lunch, pack them to the sports fields, or just enjoy them on your porch.  Paired with a fresh salad, you've got a 5 minute dinner that will make everyone very happy!

And of course, you want to keep one of our yummy Pizza Packs on hand for those nights when hunger strikes and you are out of tricks!  Kids love to make their own little pizzas, and so do grown-ups!  They are easy, fun & healthy, and much tastier than Domino's!

Keep your kitchen well-stocked with our Grocery Goodies - Be Nice Bagels with fruit from our Fresh Fruit Quarts are our new breakfast go-to in my house, and we love afterschool snacking on Camino Pumpkin Bread (can you tell we are a carb-loving house!?).
