Greek Night on the Porch!

Some weeks I can't come up with anything I'm excited about for our menu, and then other weeks, like this one, I can't make up my mind between so many things I want to make! I think it must be the weather! Anyway, here's what we're doing - many great things to choose from!

Spinach Salad with Chopped Cucumber, Tomatoes & Feta with Homemade Greek Dressing

We've made our Greek Orzo many times, and I have to say that I never get tired of it. It's great warm or cold, on its own or over fresh spinach as a green salad dish. If you're going gluten free, our Quinoa is a very tasty option - even if you're not going gluten free, it's pretty awesome! We're making it with our favorite Roasted Red Pepper Dressing! The pasta has so many yummy goodies all mixed in - feta, fresh red peppers, snap peas, edamame beans, chicken - that you really feel very virtuous even while you are eating it. It's also oddly appealing to kids, even with all of the crazy stuff mixed in, since it's in a pasta base and they can sort of pick out the things they like and leave the things they don't. I particularly enjoy eating it as a leftover, so you may want to save a little of your spinach for you lunch on Wednesday!

Y'all know my love of this Lemon Hummus, and I would even say that when I don't have any around, I may get a little cranky. If I am making dinner for my family, you can always find a bottle small glass of wine and bowl of hummus & crackers right where I'm working, since I find those items take the edge off of many things, not the least of which is hunger. Plus, it's nice to have something that the kids like to eat before dinner so that I don't have to deal with too much whining and become Mommy Dearest. (In one famous incident a year or so ago, several events conspired to cause me to become so annoyed while trying to make dinner that I threw a whole pot of cooked spaghetti across the kitchen and stormed out of the house. Not my finest moment, but we learn from our mistakes. It probably never would have happened if I had had hummus & wine on hand. Just saying.

Keeping the healthy & yummy spirit of dinner going, we're pairing the pasta with a fresh & delicious Chopped Spinach Salad - chunks of cukes & tomatoes in a light Greek dressing, with feta to add in - yum!

Our Greek Porch Pockets are fun, easy, and delicious! We like to keep some in the freezer for quick bites here and there - kids' dinners, quick appetizers for friends & lunches. Add a pack to your order & you'll have a Greek Feast for your family or a lifesaver on hand for another time!

Ok, now for the sweet part! We're so happy to have Twisted Fork Pound Cake back on the menu this week! They are so, so amazing - our friends down in Georgia have a fabulous company called The Twisted Fork, and every once in a blue moon, they bring us up some to share with you all. These will go fast - obviously I only have a limited number, so make sure to order yours today! They will come frozen, and you can enjoy it with your dinner or keep it on hand for a special occasion!

Stocking up on Get You Through the Week Meals is a very good plan for busy people.  Personally, I find myself wishing I had something good on hand for dinner many nights - I need my own service!!  We made this new Chinese Chicken Salad for Thursday Take-Away this week, and we love it!  It's so crunchy, with fresh cabbage and chow mien noodles, shredded rotisserie chicken, rice noodles, lettuce and a tangy sweet sesame dressing.  So good you'll be craving it again soon (and we'll make it again soon, because it's awesome!).

We haven't made our Four Cheese Stuffed Shells in a long time, and I'm not sure why, because they are a total crowd-pleaser.  They are stuffed with cheese & sausage, baked in a pool of yummy fire-roasted marinara - great to have on hand for a family dinner or a gift for a friend!

It's confirmed, our Quinoa & Zucchini Veggie Burgers are a front-runner for our Porch Veggie Burger!  They are very tasty, whether you're a vegetarian or not, you'll love the flavors and crisp on the outside, soft on the inside texture.  This is a fast, healthy dinner meal, so if you're needing 20 minutes to the table on some nights, this is it!

Of course, Chicken Enchiladas Verdes, Pizza Packs, and all of our Grocery Goodies are old friends that I know many of you rely on to keep the wheels on, and rightly so.  One customer told me this week that she's down to just milk and fruit at the grocery store, and that's what we like to hear!  And when we're open at The Porch soon, you won't even need to go any further for milk & fruit!  In particular this week, I'm excited that our friends at Be Nice Bagels are offering mini bagels!  That's the perfect size for my little people in the morning, and a great quick snack for me or the kids during the day!  We're doing a combo with half chocolate chip and half pumpkin - something for everyone!
