Mamacita's Tortilla Soup & Salad Dinner

Winter is coming, y'all (I don't think the Game of Thrones people have trademarked that line yet, at least not with a "y'all" in there).  Finally, its a little chilly, you can pull out those warm boots and light a fire.  It's just perfect weather for this amazing Tortilla Soup menu!  I love it, and I think y'all will too!

Tuesday, October 29: Tex-Mex Soup & Salad Dinner
Mamacita's Chipotle Tortilla Soup:  your choice of Smoked Chicken or Yellow Squash
All the Fixings:  Avocado, Shredded Cheese, Sour Cream, Chips, Jalapenos, Cilantro Rice & Lime
Southwestern Salad with Corn & Black Bean Salsa and Homemade Cilantro Jalapeno Ranch Dressing
Optional Extra:  Three Amigos Mimi's Queso, Ninfa's Green Sauce & Homemade Salsa with Chips ($10)
Kids Meal:  Shredded Chicken Soft Tacos ($6)
Dessert:  Halloween Brownies with DIY Icing & Scary Sprinkles ($6)

This week's meal really is a make-your-own extravaganza, so it will be fun for everyone, no matter how picky!  You'll get soup, of course, made with amazing smoked chicken or vegetables, cilantro, chipotle, corn and tomatoes.  It's so flavorful and savory that no one may notice that it's actually really healthy & filled with veggies.  You can dress your bowl up in a million different ways.  Stir in rice, top with avocado, cheese and jalapeños, crunch up some chips on top, squeeze on a lime and dig in.  Or maybe you're a purist and will go with naked soup.  It's up to you, but it will be fun to let everyone make his or her own perfect bowl.

If, like me, you're more of a salad person than a soup person, you can make the Southwest Salad the main event.  Have a little cup of soup, just because it's so tasty, but then create an awesome salad by adding, our Black Bean & Corn Salsa, cheese, veggies, chips or whatever else you like to a bed of fresh greens.

Even though this meal is - in my opinion - very kid-friendly, I'm adding a kids' option because we had a very ugly scene one night over this very recipe.  I normally don't make my kids eat things they don't want to, but for some reason I really, really, really felt that Finn should at least try it.  He felt strongly the opposite, and it became, in family lore, "Tortilla Soup-gate."  Not pretty.  If you've got very picky eaters, you can get a small portion of plain shredded chicken and flour tortilla and let your kids load cheese or beans or whatever they want on top, thus avoiding tears and hair-pulling and saving more soup for you!

(In case you're wondering, Mamacita was my mom's mom, and in all the years I knew her, I'm pretty sure she never turned on her stove.  When she cooked for us, we were treated to such kid favorites as tomato aspic or a dry tuna fish sandwich with bread and butter pickles.  Mmmm.  Kids love that.  So in honor of Mamacita's lifelong rejection of cooking, I've named this very tasty, hearty soup after her.  She would probably be relatively indifferent to the honor, but I'm sure she would have liked the soup.)

For our Get You Through the Week meal choices this week, we've picked a few that we always hear rave reviews about!  The Queso Enchiladas are is so yummy - a Tex-Mex version of comfort food!  The beef version is made with delicious Grayson all-natural beef and the Summer Squash version is a great choice for vegetarians and non-vegetarians alike - they are very savory, cheesy & really flavorful! They are not spicy, so you don't have to worry about kids not being able to eat it, and it also makes a great gift meal.  

The Company Shrimp and Grits are fantastic as well, and a little more elegant, so you can enjoy it with a nice glass of wine in front of your favorite show or serve it to guests for an easy & delicious dinner.  Finally, we love the Four Cheese Stuffed Shells, and they are so great to have on hand for busy weeknight meals that we wanted to make more!  Just pop the pan in the oven and you've got dinner for hungry, busy people!

Stock up on Pizza Packs, Salad Packs, Be Nice Bagels, Pumpkin breads, etc to keep your mornings easy, your babysitters & kids happy, and your leftovers elegant (isn't it great how salad can do that?!).

  • Dinners will be delivered or be available for pick up at Sociale Gourmet on Tuesday afternoons between 2-6 pm.
  • If you are new, please send your address so we let you know if you are a pick-up or a delivery person.  
  • If you have any food allergies, please let us know!
  • You are welcome to request anything you'd like (no cheese, no onions, etc), and we'll let you know if we can do it!
