It's so crazy that it's "that time" again - we're at the end of the DOTP year and about to take our summer break.  Of course, we'll still be here at The Porch making all sorts of good things for your family and gatherings, and we'll keep our Grab & Go stocked up all the time so you can come on by and pick up food anytime we're open.  For this week, we're sending you off with a fabulous family dinner that we know you all love (based on how many orders we get whenever we offer Tacos!).

You can customize your meal - steak, chicken or veggies, and then at the table folks can customize their taco dinner to be just the way they like!  It's always fun to see what everyone comes up with - from bare bones to kitchen sink, there's no such thing as a bad taco!  Make it a true Fiesta with an add on of a Three Amigos!

Our GYTTW meals will help you get through the week & maybe even the end of the school year if you're lucky.  I know that our family calendar is completely full of "last" events - plays, performances, parties & ceremonies that will have us running like crazy in the next few weeks.  Even finding a minute to sit down together will be a little luxury that I'd rather not spoil by having to do dishes!  Or, if it's just too busy to eat a real meal, at least you'll have something stocked up in your freezer to take away on beach and mountain weekends coming up this summer.

Of course, the Rio Grande Chicken Enchiladas are one of those things that you just want to keep in your freezer at all times.  You never know when you'll need a pan - for yourself or a friend - then you never have to worry.  If you're in the mood for something a little different, try our Indian Spinach & Cheese Enchiladas with Mint Cilantro Sauce.  They are so fresh-tasting and unique that you may find you have a new favorite Porch enchilada!

The Arroz con Pollo continues to be one of our most popular meals, as it's a simple but delicious weeknight dinner that is an easy sell at the family table.  Cheesy & hearty with smoked chicken and wild rice - pair it with a green salad and you're good to go!

A breakfast casserole is a really useful thing to have in your freezer - great for a lazy Sunday, a breakfast for dinner meal, or an easy way to feed a weekend crowd (hungry teenagers perhaps?!).  The Breakfast Sausage Strata is made with tasty sausage, cheese & eggs, this is a very hearty dish that will make brunch a snap!

The Southwest Chicken Pie is made with white meat chicken, cheese, black beans, corn, edamame beans & a lovely crusty lattice on top!  So pretty for any gathering.

Our Goat Cheese Lasagnas are always a big seller, and with good reason.  In between noodles are layered cheese, spinach, homemade fire-roasted marinara, and Italian Sausage.  Goat cheese tops off this yummy dish, making for a flavorful and sophisticated dinner!

That's what we're making this last week for y'all & we're looking forward to seeing you on your porches!

Tuesday, April 28th: Asian Spring Dinner
(dinner for 3-4 $35, dinner for 4-6 $45)
Main Meal Includes:
Sesame Chicken or Tofu
Scallion & Veggie Asian Noodle Salad
Romaine Salad with Ginger Soy Dressing & Crunchy Chow Mein Noodles

Kids' Meal: Chicken Potstickers & Edamame Beans and Rice ($6)
Optional Extras:
Southwest Porch Pockets and Cilantro Ranch Dip ($12)
Edamame in the Pod ($8)

Get You Through the Week Meals
Almost Summertime Tomato Bacon Jalapeño Pie ($30)
ACP with Smoked Chicken $25)
Southwest Chicken Pie ($30)
Company Shrimp & Grits ($20)
Make Your Own Pizza Packs ($25)

While we really love Southwest food here at Dinners on the Porch, every now and then we're in the mood for something different!  This Asian dinner is the perfect Spring repast - delicious hot or cold, and ideally enjoyed on the porch.  Everyone probably has a favorite Asian Noodle Salad - Spicy Peanut, Vermicelli Noodles, etc - but this is mine, hands down.  Udon noodles are pillowy and soft, and they mix perfectly with fresh veggies & our slightly sweet Asian Dressing.  I like to make a salad base of Romaine and add the noodles and chicken right on top!  Kids and big people alike will love it.

My kiddos always love dumplings, so if yours do too (or if you do!), add a Kids' Meal on and enjoy a little dumpling action with dinner.  We'll even send chopsticks for fun!

I'm starting to feel like I need a little help getting through the week y'all.  This time of year always feels like a circus at our house, and we haven't even gotten to the "end of school" performances, picnics, class parties, awards ceremonies, and on and on and on.  I can't even really guarantee that having dinners lined up in your freezer will actually help you get through the coming weeks, but I'm pretty sure it won't hurt.  Last night, faced with absolutely nothing in the freezer or fridge, we ended up eating kale, old rice and canned black beans.  No one was very happy.  So, to help us be happier, even if we can't stop the May Madness, we're going to stock up on some of these great meals.

Our Almost Summertime Tomato Pies are made with Greek Yogurt rather than mayo, so they are light but so flavorful, with cheese, scallions, bacon & fresh jalapeños on top (so you can take them off if you don't love spicy food like we do!).

The Arroz con Pollo continues to be one of our most popular meals, as it's a simple but delicious weeknight dinner that is an easy sell at the family table.  Cheesy & hearty with smoked chicken and wild rice - pair it with a green salad and you're good to go!

The Southwest Chicken Pie and Company Shrimp & Grits are a little bit fancy, but nothing you need to get out the china for!  The Chicken Pie is made with white meat chicken, cheese, black beans, corn, edamame beans & a lovely crusty lattice on top!  Our Shrimp & Grits are lemony and fresh-tasting, with mushrooms scallions, then the cheesy grits come in a separate pan.  They make a great dish for company - hence the name - or just for enjoying with your own special family.

Finally, our Make Your Own Pizza Packs are a perfect solution for a great & healthy meal to leave for the babysitter, or a great way to get bigger kids in the kitchen with you.  We provide all you need to make individual pizzas:  flat bread, pizza sauce, cheese, pepperoni, olives & veggies.  You may have a purist in the family along with someone who likes "the works" - they'll both be super happy with a homemade pizza just how they like it!

That's what we're making this week for y'all & we're looking forward to seeing you on your porches!  Stay warm & get ready for great dinners!

Tuesday, April 21st: Fajitas Are Fabulous
(dinner for 3-4 $35, dinner for 4-6 $45)
Main Meal Includes:
Grilled Chicken, Grilled Flank Steak or Portobello Mushrooms
Grilled Veggies
Cilantro Rice & Refried Beans
Taco Fixings:  Shredded Cheese, Shredded Lettuce, Sour Cream, Salsa & Jalapeños
Corn or Flour Tortillas

Optional Extra:  Three Amigos - Chips, Queso, Guacamole & Salsa (5 for $12)
Optional Extra:  Twisted Fork Almond Pound Cake! (Large, $40)

Get You Through the Week Meals
Goat Cheese Italian Sausage or Butternut Squash Lasagna ($30)
Killer Mac & Cheese with Smoked Chicken ($25)
Breakfast on the Ranch ($25)
Southwest Sausage Bake ($20)
Make Your Own Pizza Packs ($25)

Taco night is a pretty easy sell at my house, and since we end up eating at The Porch quite a bit, we have many different variations on the perfect taco! We know y'all have your own favorites as well, so here's your chance to let your creative side loose & enjoy a tasty meal at the same time. Pile your taco up with meat, veggies, rice & toppings - there's no wrong way to go!

Keeping it easy all week is no problem when you stock up on Get You Through the Week meals.  Our Goat Cheese Lasagnas are always a big seller, and with good reason.  In between noodles are layered cheese, spinach, homemade fire-roasted marinara, and either Italian Sausage or Roasted Butternut Squash.  Goat cheese tops off this yummy dish, making for a flavorful and sophisticated dinner!  Either version your opt for will be elegant, delicious & a perfect dish on any table.

Speaking of elegant, we are offering Twisted Fork Pound Cakes for sale this week - they are so, so delicious that we get them all the way from Georgia just for you!  They'll make a fabulous dessert at your next special occasion, and we send them to you frozen so you don't have to worry about being tempted to nibble on it beforehand!  We don't have many, so if you want to plan for a great dessert at your next party, grab one while you can!

The Killer Mac & Cheese is one of my family's favorites, and we're not even big Mac & Cheese people.  I'm not sure where we got off the bus on boxed Mac & Cheese - it wasn't the fact that it's not healthy, but I think I got a little annoyed when it seemed like one box was not enough for dinner.  I mean, if I'm opening two boxed and inevitably scorching a pan because I forgot to check on the milk in there, I might as well go to the trouble of making it myself.  In any event, this Jamie Oliver version is great - perfect with a salad for a main course or as a hearty side with something else.

Breakfast on the Ranch is an awesome new casserole we started making this Fall - it's made with cheese, diced potatoes, sausage & lots of eggs - popping in the oven and then heading back to bed is a MUCH better way to feed your family breakfast than standing around in the kitchen getting all of your pans dirty!  Trust me.

Our Southwest Sausage Bake is a smaller casserole that will be a hit with everyone in your house!  It's super-healthy (made with whole-grain wheat berries!) and also super-tasty, with smoked sausage, beans, corn, edamame, fire-roasted tomatoes & mixed cheese.  Bake, eat, enjoy.  I love it when things are easy!

I'm hoping y'all are all having a great week & that the Easter Bunny will be bringing you lots of nice chocolate things this weekend!  Our Bunny still has a little work to do before Sunday ...  We did have a great time on our South Carolina getaway this past week - a few of us got sunburned, but other than that, we survived intact & had a great time just hanging out together.

Next week we'll be back to reality with school & all that jazz, so it's good to have a meal plan that will make re-entry easy.  Our Pie in the Sky Tamale Pie meal is just the thing, a big hearty casserole that is equal parts comfort food and interesting flavors that everyone will enjoy.  It's a layered casserole, with a corn tamale base, a middle layer of mildly seasoned ground beef, beans & cheese, and another layer of corn tamale on top.  It bakes up to a perfect dish that you can top with hot sauce to add a little kick.  Paired with our Southwest Salad, it's a great family dinner that couldn't be easier.

Continuing on a Southwest theme this week, we've got Rio Grande Enchiladas - both chicken & sweet potato varieties, as well as our very popular Arroz con Pollo with Smoked Chicken, a slightly spicy wild rice casserole with flavorful smoked chicken, tomatoes & Mimi's Queso.  Finally, make sure you've got meals covered for the weekend, with a great Breakfast Strata that will feed lots of hungry guests, or a Pizza Pack that makes the perfect dinner to leave for the babysitter to make with the kids, or a fun dinner project for game night!  You'll have all you need to make healthy and interesting individual pizzas without all the hassle!

That's what we're working on for you this week - enjoy the weekend & we'll look forward to seeing you on your porch this week!

Well, I think we said we were going to take a week off, and indeed, I am heading out of town for a few days, but we really just wanted to make sure y'all didn't go hungry this week so we picked one of our favorites out of the menu vault to keep everyone stocked up & happy!

If you're hoping to be having fun outdoors now that the weather is turning so nice (or if you know you'll be busy running around and not have time to make dinner!), stock up on some good Get You Through the Week Meals to make meal-times much easier.  These one-dish dinner & breakfast ideas are some of our faves.

Kids and grown-ups alike love our Pie in the Sky Tamale Pie - it's layered with corn tamale casserole, seasoned ground beef, cheese & beans, and it's a hearty meal that is perfectly perfect on a busy weeknight & they feed a crowd, so they're also good to keep on hand for unexpected dinner guests or a sleep-over crowd.

A good breakfast casserole is one of my favorite things, because it means I don't have to get up early & make breakfast for anyone!  If you're heading out of town or planning a brunch, it's the perfect way to feed everyone without any hassle.  We also like them for a breakfast-for-dinner meal - add a little salad and you're good to go.

Lasagna is not just Garfield's favorite food, we think it might be everyone's favorite food, judging by the way they fly out of our freezer at The Porch!  It's easy to serve a great dinner to guests or family when you start with this tasty dish - layers of noodles with homemade marinara, cheese, Italian sausage or roasted butternut squash, spinach & goat cheese for a rich flavor that pairs very well with red wine!

That's what we're making this week!  If you're off somewhere fun for Spring Break, enjoy & be safe and we'll see you next week!

Rio Grande Chicken Enchiladas Verdes or

Southwest Salad with Corn & Black Bean Salsa and Homemade Cilantro Ranch
Kids' Meal:  BBQ Pulled Pork Sliders ($6)
Optional Extra:  Three Amigos with Chips, Queso, Salsa & Guacamole ($10)

Get You Through the Week Meals:
Breakfast on the Ranch Casserole $25
Goat Cheese Lasagna with Italian Sausage or Butternut Squash $25
Extra Enchiladas - any variety $25
Make Your Own Pizza Pack $25

Enchiladas have always been a favorite DOTP meal, and this week we're throwing it all on the table for you (and your family, of course!). Over the years, we have tried lots of new kinds of enchiladas & come up with some that we think are the very best, so we thought it would be fun to give everyone a chance to try them this week.  Plus, you can stock up on an extra pan to take with you to the beach or the mountains if you're heading that way for Spring Break.

Our Rio Grande Chicken or Sweet Potato Enchiladas are, of course, quite delicious.  The Chicken variety is made with white meat chicken, black beans, spinach, cheese & lots of great seasonings.  The Sweet Potato & Black Bean version is a great combo of savory & sweet - made with cumin & green chiles - it's a veggie meal that will satisfy everyone.  Both of these enchiladas come with our delicious Verde Sauce - a creamy avocado & tomatillo sauce, as well as Mimi's Queso.

The Holy Molé Beef Enchiladas are filled with seasoned ground beef, cheese & beans, and come with a mild red sauce made with tomatoes & also come with everyone's favorite Queso!  They are a good choice for kids who (like mine) might reject a dinner involving leafy green spinach.

Finally, the Indian Spinach & Cheese Enchiladas are one of our most unique and flavorful dishes. They have the flavor of Saag Paneer - the tasty spinach dish you may have had at Indian restaurants, but rolled up in a flour tortilla & topped with a very fresh-tasting mint sauce.  Again, this is a vegetarian meal that non-vegetarians will enjoy equally and might be a fun way to try a new type of cuisine with low risk.

I know lots of you will be off to fun vacations for Spring Break coming up, and since we all know how much of a pain it is to cook on vacation, we're here to encourage you to plan ahead and take some meals along with you.  Our frozen casseroles are perfect to throw into the oven after a long day of fun in the sun, and if you pack them in a small cooler, they'll be fine for several hours on the road.

Take along some extra enchiladas or one of our famous Goat Cheese Lasagnas - they are always so popular that it's hard to keep them in stock here at the restaurant, so take advantage of the opportunity to grab some while we're making it.

A great breakfast is always a nice treat on vacation, and our Breakfast on the Ranch Casserole is a good & easy way to start the day.  It's made with diced potatoes, eggs, cheese, Neese's sausage, and green chiles, and it's always super-popular with kids (and parents who don't have to cook and clean up breakfast!).

Finally, Pizza Packs are handy to keep on hand as well. They are perfect for a busy weeknight when people may be going in different directions and can make a fresh meal at different times.  They come with all the ingredients necessary to make a simple & healthy dinner in minutes, and kids will like the chance to get to customize their own.  They are also great for sitters or teens to make dinner without making a disaster in the kitchen.

We're looking forward to this fun menu & then we'll be off for a week at Spring Break, so stock up now!

Cottage Pie with Grayson Farms Ground Beef & Pappy's Mashed Potatoes
Wedge o' Luck Salad - Iceberg Wedge Salad with Peppers, Watercress, Bacon, Blue Cheese Dressing & Croutons
Vegetarian Version:  Cottage Pie with Summer Squash, Portobello & Boca

Get You Through the Week Meals:
    Porch Arroz con Pollo $25
Killer Mac & Cheese with Fire-Roasted Tomatoes & Kielbasa $25
Rio Grande Chicken Enchiladas Verdes $25
Chipotle Smoked Chicken Taco Pack $25
Make Your Own Pizza Pack $25

In full disclosure, I love almost everything about the Irish & Ireland.  The warm people, the awesome group dancing - hello Riverdance, the pubs & music.  It's one of my favorite places I've been.  The food? well, let's just say that I think their focus on drinking and dancing more than makes up for any shortcoming there. We're not here to judge. I just wanted to get that out of the way before I suggest that you celebrate St. Patrick's Day with this very tasty dinner that I'll say was "inspired" by Ireland! In that spirit, you can enjoy a delicious dinner that is beyond easy to get on the table, and spend your evening clicking your heels together and making your kids laugh trying to do the Riverdance (it always feels like I'm nailing it).

We use all-natural grass-fed Grayson Farms Ground Beef for our Pies, thus making them "Cottage" pies, rather than the traditional Shepherd's Pies made with ground lamb.  Both have their merits, but we've found that as a family meal, the beef goes over much better.  That seasoned beef is topped with veggies and a thick layer of seasoned Pappy's Mashed Potatoes - my very favorite!  It's a strange way to make a pie, we agree, but when something works, it works.

We like this meal paired with the crispy crunch of the Iceberg Wedge.  Building it up & dressing it is all part of the fun, and I've found that even people who say they don't like salads will happily dig into a Wedge.  Is it the name?  Who knows why, but again I say, when it works, it works.

If you celebrate as much as the Irish on Tuesday, you'll be wanting to keep the rest of the week simple & easy!  Plan ahead by ordering a few GYTTW Meals - so nice to have dinner already sorted out before the week even starts!

The Porch Arroz con Pollo has been a hot ticket ever since we introduced it this Fall.  It's made with wild rice, Mimi's Queso, tomatoes & our yummy smoked chicken.  Pretty simple, but muy delicious!

Killer Mac & Cheese has become another Porch staple - we started with a Jamie Oliver recipe and made very few changes (it's hard to improve on his recipes, in my opinion), and we have a classic.  If you love Mac & Cheese from the box, we're not going to argue with that, but I'll just say that different can be good too.

Rio Grande Chicken Enchiladas are one of those things that you just want to keep in your freezer at all times.  You never know when you'll need a pan - for yourself or a friend - then you never have to worry.

As the Spring season gets going, we like to keep Taco & Pizza Packs handy as well. They are perfect for a busy weeknight when people may be going in different directions and can make a fresh plate at different times.  Both packs come with all the items necessary to make a simple & healthy dinner in minutes, and kids will like the chance to get to customize their own.  They are also great for sitters or teens to make dinner without making a disaster in the kitchen.

That's what we've got cooking this week y'all!  Hope you enjoy it all & we'll look forward to seeing you on your porch!

    Main Meal Includes:
Lemon Grilled Chicken or Roasted Veggies
Orzo Greek Pasta with Veggies, Feta & Kalamata Olives
Fresh Romaine Salad with Homemade Basil Balsamic Dressing

Rio Grande Chicken or Sweet Potato & Black Bean Enchiladas ($25)
Jumbo Stuffed Shells with Italian Sausage or Spinach & Mushrooms in Homemade Fire-Roasted Tomato Marinara ($25)
Make Your Own Pizza Packs ($25)

I love a dinner where you can mix things up a little on your plate, and this is one of those kinds of meals.  We're making our very tasty yogurt-marinated lemon chicken, which is seasoned with lots of tasty herbs, and pairing it with a great pasta dish.  I like this pasta warmed up and served with the chicken over the salad, but it's also great served separately.  There's no wrong way to eat a fresh & healthy dinner!

We're also really partial to Hummus & Tabouli, as you know! Alex has perfected these recipes, and we think it's worth the trouble to make it from scratch when the flavor ends up being so fresh & light.  So if you're looking for a fun way to make your meal a little more festive, this is a great plan!

Keep things rolling happily along during the week by stocking up on some Get You Through the Week Meals!  The Kale Pasta Bake is made with Greek yogurt & cheese, mixed with healthy kale and flavorful sausage.  It's a hearty but healthy dinner that will be an easy fix for a busy weeknight dinner!

Rio Grande Enchiladas are always a hit, no matter where you plan to serve them. At home, to friends, or as a gift meal to a friend in need of some dinner love.  Jumbo Stuffed Shells are another great family night dinner - they are filling, easy & so tasty!  I always order plenty of these to keep on hand so that taking care of dinner when I'm in a pinch is no biggie!

Southwest Chicken or Vegetable Pie ($30)
    Chicken Tikka Masala ($25)
Make Your Own Pizza Packs ($25)

Taco night is a pretty easy sell at my house, and since we end up eating at The Porch quite a bit, we have many different variations on the perfect taco! We know y'all have your own favorites as well, so here's your chance to let your creative side loose & enjoy a tasty meal at the same time. Pile your taco up with meat, veggies, rice & toppings - there's no wrong way to go!
Keeping it easy all week is no problem when you stock up on Get You Through the Week meals.  Our Southwest Chicken or Veggie Pies are always a big seller, and with good reason.  They are filled with shredded chicken, beans, corn, peppers & cheese in a homemade bechamél sauce and topped with a flakey puff pastry top.  The veggie version is equally tasty, with zucchini in place of the chicken.  Either version your opt for will be elegant, delicious & a perfect dish on any table.
The Chicken Tikka Masala is a very fresh & healthy version of an Indian classic dish.  We make the sauce from scratch, with fresh ginger and seasonings, tomatoes & a dash of cream, so it's rich without being heavy.  The flavors are amazing and you'll enjoy it on a busy weeknight or in lieu of takeout on a lazy weekend night!

Tuesday, February 24th: What goes with Red Wine?
    (dinner for 3-4 $35, dinner for 4-6 $45)

    Main Meal Includes:
Italian Sausage or Butternut Squash & Goat Cheese Lasagna
The Godfather Spinach Salad with Chopped Veggies, Croutons, Feta & Cilantro Ranch Dressing
Kids' Meal: Orzo with Meat Sauce Marinara & Mozzarella Cheese ($6)
Optional Extra:  Southwest Porch Pockets (5 for $12)

Get You Through the Week Meals
Porch Arroz con Pollo with Smoked Chicken & Queso ($25)
Company Shrimp & Cheesy Grits ($30)
Extra Frozen Lasagna - Sausage or Butternut Squash ($30)

Y'all, I can't even begin to calmly discuss the recent weather & related school closing events.  While the children are loving it - natch - it's really inhuman to subject parents of pre-schoolers to endless days of entertaining little children in bitterly cold conditions.  Between the laundry generated when kids are in and out of the snow all day and the snacking at all hours, it's really hard to maintain one's sanity.  Not to mention if you're trying to work or accomplish anything at all.  So, we here at DOTP felt that, under these challenging circumstances, you folks deserved one of our most special meals - and the fact that it pairs very nicely with a hearty red wine is just icing on the cake!
We have been making this very tasty Lasagna for as long as we've been doing Dinners on the Porch, and it's probably our most-requested casserole.  We fill up the layers with a homemade fire-roasted tomato marinara, cheese, fresh spinach & Italian Sausage or roasted butternut squash (they are both really tasty!). You may want to plan ahead and get one for your freezer as well.  You'll find the whole meal really enjoyable with a big fresh Spinach Salad - but we won't tell if you don't eat your veggies and just drink the wine!
Your kids (or you!) will love the Kids' Orzo & our yummy Southwest Porch Pockets filled with seasoned ground beef & cheese.

Get stocked up for any and everything that comes your way next week - not suggesting that there will be anything crazy going on, but you never know!  Our Porch Arroz con Pollo is a super-tasty rice casserole loaded up with smoked chicken, tomatoes, & lots of cheese and seasonings.  It's great paired with salad or chips and salsa, it's a great weeknight or easy weekend dinner.
A slightly fancier but also very delicious meal is our Company Shrimp & Grits!  It's a light & lemony version, with mushrooms, lots of shrimp & bacon.  The Cheesy Grits are separate, so when you're ready to serve, you just heat it all up and serve the Shrimp on top of the delicious grits.  So yummy!

That's what we're making this week for y'all & we're looking forward to seeing you on your porches!  Stay warm & get ready for great dinners!

Tuesday, February 17th:  Fat Tuesday Fun!
    (dinner for 3-4 $35, dinner for 4-6 $45)
    Main Meal Includes:
All Saints Gumbo with Chicken, Sausage and Shrimp and served with Jasmine Rice
Fat Tuesday Green Salad with Homemade Remoulade Dressing
    French Quarter Green Beans
Vegetarian Version:  Black-Eyed Pea & Kale Gumbo
Optional Extra:  Central Grocery French Bread Muffaletta Sandwiches (2 for $12)

Get You Through the Week Meals:

    1) Southwest Chicken Pie  ($25)

    2) Bacon Cheeseburger Bake  ($25)

    3) Rio Grande Chicken Enchiladas Verdes ($25)

    4)  Rio Grande Sweet Potato & Black Bean Enchiladas Verdes ($25)

Get ready for a really fun dinner, inspired by the flavors of New Orleans - one of my favorite cities of all time!  We have often made Jambalaya for Fat Tuesday, but this year we're changing it up a little because we love this All Saints Gumbo!  It's loaded with chicken, shrimp & sausage and so delicious!  It's also warm and slightly spicy, so it's the perfect dinner for what seems like it's going to be a cold night.  The veggie version is really delicious as well - very flavorful and tasty!
With a big green salad, our Homemade Remoulade Dressing, and French Quarter Green Beans - with olives, garbanzo beans, purple onions & tomatoes (all the colors of Mardi Gras!) - you may have to pinch yourself to make sure you're not floating along Bourbon Street. Okay, well maybe that's a bit of a stretch, but we think you'll be pretty happy!
Once the fun of Fat Tuesday is over, you can keep the spirit of celebration alive with great dinners that you don't have to cook - that's certainly something to throw beads around about! Our Southwest Chicken Pie is one of our most-requested casseroles - it's full of white-meat chicken, veggies and cheese in a homemade bechamél and topped with a flakey crust.  Elegant and delicious, it's great for family meals, guests or gifts!
On the other end of the fancy-spectrum, the Bacon Cheeseburger Bake is a family favorite that's just good comfort food, with macaroni, ground beef, cheese, bacon & pickles in a homemade sauce that does, in fact, make the whole casserole taste like a Bacon-Cheeseburger.  Sounds weird, I know, but it's really pretty tasty!
And of course, we keep the Rio Grande Enchiladas going all the time - they sell out every day at The Porch, and every day we make more.  It's a little silly, actually, but we're glad y'all like them as much as we do!
That's what we've got in store for you this week - can't wait to see you on your porch!

    Main Meal Includes:
Warm Brisket or Grilled Chicken or Grilled Portobello Mushrooms
Rosemary Roasted Winter Vegetables: Kale, Brussels Sprouts, Baby Red Potatoes, Red Onions & Parsnips

Get You Through the Week Meals:

    1) Pie in the Sky Tamale with Beef ($25)

    2) Booyah BBQ Chicken & Pork Stew & Cheesy Cornbread ($30)

    3) Rio Grande Chicken Enchiladas Verdes ($25)

    4)  Rio Grande Sweet Potato & Black Bean Enchiladas Verdes ($25)

I'm going to admit something that I know won't be much of a surprise to those of you who have been DOTP people for any length of time, but in my house, there are many nights where dinner is a catch-as-catch can affair and there's nary a fresh vegetable in sight.  I aim for a "real" dinner twice a week, and then I figure that the rest of the nights, we're going to just coast.  I do really care about feeding my family healthy food, but it's just really hard y'all.
So, that being said, this dinner may count double-time for us.  It's loaded with really delicious & flavorful veggies, warm chicken, brisket or portobello mushrooms on a bed of wilted kale.  You can mix it together with the Fresh Spinach and make a salad dinner, or leave all of the parts separate and serve it family-style.  If you want to bulk it up, add a quart of delicious Ribolitta Soup and have a soup & salad night.  The Ribolitta has tons of veggies, white beans and potatoes - it's super-healthy and tasty!
If, like me, you find that putting dinner on the table every night can be challenging, stock up with some of our favorite Get You Through the Week Meals.  Kids and grown-ups alike love our Pie in the Sky Tamale Pie - it's layered with corn tamale casserole, seasoned ground beef, cheese & beans, and it's a hearty meal that is perfectly perfect on a cold winter night.
The Booyah BBQ Stew is our version of a Brunswick Stew - it's full of super-delicious pulled pork and smoked chicken, tomatoes, corn, and veggies.  It's so hearty & paired with cheesy cornbread, you'll have happy campers at your table!
I know y'all all are familiar with our Enchiladas (and if you're not, get with the program y'all!), so if you're craving them, here's a good chance to have them dropped right to your door! They are good for family dinner, great gifts for friends, and perfect for a casual Friday night supper with neighbors.

That's what we're making this week for y'all & we're looking forward to seeing you on your porches!  Stay warm & get ready for great dinners!

It seems to be International Week here at Dinners on the Porch.  It's funny how these dishes that seem like old standbys for us now are very diverse in their roots - our kitchen really is a melting pot. Growing up in Houston, I didn't even realize how multi-cultural our dining options were, but with such a large immigrant population in Houston, various friends who were first-generation Americans, and a foodie father (before that was a thing!), I was eating all kinds of things from an early age.  My children are a little more resistant to trying new things that I was at their age, I think, so I usually try to introduce new flavors in familiar packages - hence the "Indian Enchilada!."

Of course, Italian food seems to be almost more appealing to kids than hamburgers, so it's not a hard sell at all.  And I find that that love of all things Italian is as strong for adults as for children - it just feels like comfort food.

We love our Jumbo Stuffed Shells & have been making them for years.  They are fresh & filling, without being quite as heavy as a lasagna.  The sauce is homemade, with fire-roasted tomatoes, fresh basil & garlic.  The tasty shells go great with the Fresh Spinach Salad tossed up with veggies, feta & our yummy Italian dressing. And as I always suggest, even if your kids won't eat a salad, seeing it on the plate is a big step in the right direction!  Fresh rolls & honey butter complete this fun dinner, and you can sit back and enjoy the evening with your fam.

Keep your week rolling along smoothly by stocking up on some good Get You Through the Week meals.  The Indian Spinach & Cheese Enchiladas are so flavorful & healthy, and very different.  We know they may sound "weird," but trust us, they're tasty!

The Thai Red Curry is slightly spicy and so delicious!  We love to eat it all warm in a bowl snuggled up on the couch watching a good movie!  It's made with lots of fresh veggies, like red peppers, edamame & mushrooms and shredded white-meat chicken.

Finally, the Chipotle Chicken Taco Pack is always a hit with everyone - it's a great dinner to leave for a babysitter or big kids to make on their own, or for a quick weeknight meal when everyone is running every which way!

That's what we're making this week for y'all & we're looking forward to seeing you on your porches!  Stay warm & get ready for great dinners!

Tuesday, January 20th: Rio Grande Enchiladas Verdes!
     (dinner for 3-4 $35, dinner for 4-6 $45)

    Main Meal Includes:
Rio Grande Enchiladas Verdes - Chicken or Sweet Potato & Black Bean
Southwest Salad with Homemade Cilantro Ranch
Large Meal includes Chips & Salsa

Kids Meal: Mini Chicken & Cheese Burritos($6)
    Optional Extras:
Three Amigos - Chips, Salsa, Guacamole & Queso ($10)
Extra Pan of Frozen Enchiladas ($25)

Get You Through the Week Meals:

    1) Porch ACP (Arroz con Pollo) with Smoked Chicken ($25)

    2) Sneaky Mac & Cheese with Roast Pork or Broccoli ($25)

    3) Mamacita's Tortilla Soup with Chicken and Sides (rice, cheese, sour cream, tortilla strips, avocado) ($25)

There's not much to say about our Enchiladas that I haven't already said!  They are by far our most popular DOTP meal & Grab & Go dish, so if you haven't tried them yet, you need to get on it!  If you have, you know they are filled with delicious chicken or sweet potatoes, cheese, beans, & great seasonings.  Our Verde Sauce is a rich & fresh-tasting avocado tomatillo sauce with a little jalapeños zing, and the Mimi's Queso that goes on top is always amazing.

Our Southwest Salad is fresh & healthy, with veggies, Black Bean & Corn Salsa, and our great Cilantro Ranch to dress it.  We'll send it "deconstructed" so that you can add or leave off the things you most enjoy.

This week's Get You Through the Week Meals are cold weather favorites, meant to nourish & comfort.

The Porch ACP is a new casserole that we started making this Fall for our Grab & Go freezer, and it's been so popular that we want to make sure y'all get to try it too!  It's got Wild Rice, Smoked Chicken, cheese & seasonings, and it's a one-dish dinner that will be as tasty as it is easy to serve.

The Sneaky Mac & Cheese started its career as a Kids' Meal, with the "sneaky" part being the puréed cauliflower that gives it a delicious flavor that is undetectable to your youngest diners.  But parents love it too, so it's a great meal to enjoy as a family - comfort food made better!

Finally, we love hearty and spicy soups on cold winter nights, and my personal favorite is Mamacita's Tortilla Soup.  It's simple yet so flavorful, and you can add any of our great included toppings, and any others from your own kitchen that you like to make it even better.

That's what we're making this week for y'all & we're looking forward to seeing you on your porches!  Stay warm & get ready for great dinners!

All I can think about when the weather turns cold like this is how to get warm.  I shuffle around my house in ridiculous sweaters and hats, sleep in a fluffy bathrobe, and keep a tea kettle going in the afternoons.  I don't exactly hate winter or cold weather - it has a certain charm - but I hate being cold. As I'm writing this, I'm bundled in my winter coat & hat in the office at The Porch, which is especially cold due to the vent in our kitchen that exchanges freezing air from the outside for smoke. So I realize that not liking to be cold makes me exactly like everyone else and therefore this is an unremarkable thing to write about, but I'm guessing that, like me, most of y'all are thinking that warm soups and stews are one of the best ways to stay warm in the winter.

Our Booyah BBQ Stew is so tasty & hearty - not to mention warming to the bones!  It's full of roasted pork & smoked chicken, veggies, tomatoes & all simmered in a savory BBQ broth.  We like to crumble cornbread right up into the bowl, making the whole meal a stick to your ribs dinner that will keep everyone at the table very happy!

We're sending this great stew home to you with everyone's favorite salad - the Wedge!  I think a Wedge is like a gateway salad, because kids will love all the crumbly bacon and crispy iceburg lettuce, so then after they've eaten & enjoyed it, you can always remind them of how much they like "salad."  Sometimes when I tell my children things like that, it convinces them that it's true.  Do I feel bad using their naive trust in me to make them believe half-truths?  Not really, since they do a lot of things that are super-annoying, like leaving their socks and shoes all over, and arguing over who sits where in the car.  I have to get back at them somehow.

Anyhow, a Wedge Salad is super delicious at any age, and if you're wondering why we call it the Circa 1982, you can read about that story here.

Keep up the good work with eating family dinner this week by ordering up some GYTTW meals that will make weeknight dinners a snap.  Our Southwest Shepherd's Pie is comfort food with a little bit of excitement.  Seasoned ground beef is topped with beans, corn, edamame & cheese, then topped with our favorite Pappy's Mashed Potatoes.  It's a one-dish meal that's a home run y'all!

Our Enchiladas are as delicious as they are easy to serve!  This week we've got Beef Enchiladas with a zesty red sauce and Mimi's Queso, as well as our Sweet Potato & Black Bean Enchiladas topped with Verde Sauce & Mimi's Queso.  These are great for family dinners, gifts for friends, or weekend gatherings - order lots & be ready for anything!

That's what we're making this week for y'all & we're looking forward to seeing you on your porches!  Stay warm & get ready for great dinners!

There's no time like December for making special memories with your family.  Sadly, some of the memories my family may have might be less than ideal (there may be a little stress around here this month!), but having an easy dinner that we all enjoy makes it a little more likely that peace will prevail!

Our Chipotle Taco Bake Dinner is tasty & fun for everyone, as you can pile up your tacos with just chicken or veggies, top with slaw if you like, add Southwest Salad toppings in there, or just turn the whole thing into a Taco Salad.  I personally like to mix it all up, so who am I to judge someone else's taco!  You know, now that I write that, I think that could be a good life philosophy y'all.  I may have to put it on a shirt.

We realized the other day that we hadn't made Thai Curry in forever for some unknown reason, and it made me sad.  It's one of my very favorite dinners, and this time of year, it's comforting in a way that just makes me feel warm inside.  Thai Curry is best eaten in a big warm bowl while wearing cozy socks and watching Elf on TV surrounded by friends and family.  That's my idea of a great holiday tradition!

We started making ACP a few months ago when one of our employees made her own version of it and everyone loved it!  We mix up some of our favorite things - wild rice, queso & smoked chicken for a super easy to enjoy dish that will pair great with an easy green salad or just satisfy hungry folks on a busy night!

Our Breakfast on the Ranch casserole has been a big hit in the Grab & Go Freezer lately, so we thought we'd see if y'all wanted to try it too!  There's nothing not to like about a hearty, cheesy breakfast casserole with potatoes, sausage & other goodies - what could be better on a cold winter morning?!

That's what we've got for delivery this Tuesday - and then we'll be off for a week or so, but we'll keep that Grab & Go stocked if you end up in a bind, so don't fret.  Let us know what you'd like by emailing in your order to dinnersontheporchorders@gmail.com sometime before Monday morning & we'll get you on the list!

Thanks y'all and have a great weekend!

     (dinner for 3-4 $35, dinner for 4-6 $45)

    Main Meal Includes:
Choose Grilled Chicken, Flank Steak or Roasted Portobello with Veggies
    Flour or Corn Tortillas
    Diablo Rice & Refried Beans
Fajita Fixings:  Shredded lettuce, cheese, Homemade Salsa, sour cream & jalapeños

Get You Through the Week Meals:

    1) Winter Vegetable Rosemary Ribollita Soup Dinner with French Bread & Parmesan Cheese ($25)

    2) Italian Sausage & Kale Pesto Pasta Bake ($25)

    3) White Bean & Kale Pesto Pasta Bake ($25)

    4) Sweet Potato & Black Bean Enchiladas Verdes ($25)

There's not much my family enjoys more than fajitas for dinner, and this time of year, it's really nice to have an easy, tasty dinner that we can all enjoy together.  Fussy, complicated or time-consuming meals?  Ain't nobody got time for that in December.
We like to warm everything up and bring it out to the table, passing dishes around and sharing our concoctions.  I always find that passing food around the table is a good way to remind the kids about manners and trying new things and sharing.  Plus, it's less work in the kitchen for me - win!

After Tuesday's easy dinner, keep it on a roll with some healthy and tasty meals that you can grab out of the freezer and throw right into the oven.  Our Rosemary Ribollita Soup is loaded with hearty and healthy veggies like kale, potatoes, tomatoes, and carrots & cannelini beans (which I know are not vegetables, but it was too hard to write that sentence better, sorry).  Top the soup with parmesan and serve with the French Bread & you'll be warm and full in no time!

The Kale Pesto Bake with Italian Sausage or White Beans is so delicious, and we hear from folks that their kids are eating the kale (!), so it's a good one to try out on the fam.  Keep it on hand for your own family or for passing on to a family with a new baby - it's a winner!

The Sweet Potato & Black Bean Enchiladas are delicious whether you're a vegetarian or not.  They are savory and healthy, and another good dish to hang onto for a busy night, a dinner party or a gift meal - it's the perfect thing!

That's our meal this week - we're looking forward to a fun & busy month, and we're always happy to help you out during this busy time, so email us with your order or anything else we can do for you at dinnersontheporchorders@gmail.com!

Tuesday, December 2nd:  Farmer's Market Supper (the antidote to stuffing & gravy!)

Well folks, I hope y'all had a very happy Thanksgiving & long weekend, and I'm sure you've gotten all of your holiday shopping done, cards addressed, gifts wrapped, etc.  Now that that's all behind you, you can just sit back and relax in December!  Or, if you're like me, you may still have one or two tiny little things to take care of ...
In any case, after the gluttony of Thanksgiving at our house, we need to reset our diet a little bit and stock up on some healthy food to give us stamina to get through this coming month.  We think this heathy and really wonderful dinner is just the ticket for this time of year - healthy, delicious & very easy!

    Main Meal Includes:
    (Dinner for 3-4 $35, Dinner for 4-6 $45)

Farmer's Market Israeli Couscous with Smoked Chicken or Portobello Mushrooms
    Roasted Tomato Basil Soup
Spinach Salad with Basil Balsamic Dressing
    Rosemary Bread
Kids' Meal:  Orzo with Marinara & Feta ($6)
Optional Extra:  Greek Porch Pockets with Italian Sausage (4 for $10)
Optional Dessert:  Twisted Fork Almond Pound Cake ($20 medium, $40 large)

    GYTTW Meals:
South Congress Chicken or Spinach Lasagna  $25
Enchiladas Rojas - Beef Enchiladas with Fire-Roasted Tomato Chipotle Sauce & Mimi's Chile con Queso $30

Farmer's Market Israeli Couscous is a meal that I could eat every day and be happy.  Not to say I wouldn't miss other foods, not to say that it's even my favorite food, but to me, it's the perfect meal and I never get tired of it because each bite is a unique combination of flavors.  It's a delicious mixture of large, pearled couscous, smoked chicken, feta cheese, and then a million different veggies, like snap peas, mushrooms, carrots, broccoli, peppers, and anything else that strikes our fancy.  Every bite is different, and we're always so happy to hear how so many kids love it!  Maybe it's the little balls of pasta that are so fun to eat, or maybe it's just that the whole thing is so colorful, but it seems to be a hit all around!  It's great to mix up together with the Spinach Salad, or just heat up and enjoy on its own!

Nothing pairs better with a great salad than a delicious soup to warm your bones.  This Roasted Tomato Basil is like a pair of fluffy slippers for your stomach.  It's rich and flavorful, yet mild enough to be appealing to even little people (which always surprises me, considering my hatred of soup as a child).

If you're entertaining, or just looking for a way to make this dinner even more fabulous, start out with our fun Green Porch Pockets!  We're stuffing them with cheese, sausage or mushrooms, spinach, and Italian seasonings.  Dipped in a fresh basil pesto marinara, it will be a dinner appetizer that you'll remember well after the dishes are done!  (Plus, if you have leftovers, they are great in kids' lunches, or even as a quick breakfast if you're running out the door and need something to grab!)

Keeping in mind that every night is busy this time of year, make sure to be prepared for dinner (even if for nothing else!).  We're always having fun thinking up new Get You Through the Week Meals, and this week we've got some really great ones that we think will become DOTP classics!
    • South Congress Chicken or Spinach Lasagna is a Tex-Mex delight!  It's a lasagna with layers of homemade mild or spicy tomato salsa, chicken, cheese, corn & black beans.  It's a drier lasagna, so it's great for adding sour cream or your favorite salsa on top!
    • While the great popularity of the Rio Grande Chicken Enchiladas can't be touched, we like to mix it up and try new things here and there.  These Enchiladas Rojas are very delicious and really a crowd-pleaser.  They make a great gift meal as well, so it's a good option to have in your freezer to feed your own family or someone else's in a pinch!
That's our meal this week - we're looking forward to a fun & busy month, and we're always happy to help you out during this busy time, so email us with your order or anything else we can do for you at dinnersontheporchorders@gmail.com!

Tuesday, November 25th:  Ready for Thanksgiving!
Here we are at T minus one week to Thanksgiving, food, family, day-drinking with food and family, and all of the fun that goes along with that.  In all seriousness, while I have a million and one things to be thankful for and I know you do too, this is a sort-of stressful time of the year.  It's not December 20th stressful, but it's sure getting there.  So we're on top of a few things for you - just add us into your "things you're thankful for" list and we'll be happy!

Tuesday, November 18th:  Fiesta (Rio) Grande!

    (Dinner for 3-4 $35, Dinner for 4-6 $45)

    Main Meal Includes:
Rio Grande Chicken Enchiladas Verdes or
Rio Grande Sweet Potato & Black Bean Enchiladas
    Veggies & Cilantro Ranch Dip

Sneaky Mac & Cheese with Smoked Chicken Casserole $25
Extra Chicken or Sweet Potato Enchiladas for your freezer! $25

We're back this week with the #1 DOTP favorite meal - Rio Grande Enchiladas!  This is what I wrote about them the very first week of Dinners on the Porch, way back in the summer of 2010 - can you believe it?!

"So, growing up in Houston, we took for granted the absolutely fabulous Mexican food readily available all around us.  Until I got to college, I didn't even realize that there were some people who didn't know the difference between Pace picante sauce and salsa!  Now, I'm not making any claims that my enchiladas are as good as any you'd find in Tejas, but they're not bad either.  Plus, I will admit, they are much healthier than the perennial Texas favorite:  the Cheese Enchilada Platter - basically, cheese rolled in a tortilla, covered in more cheese and red sauce.

Our Rio Grande Enchiladas are made with chicken breast, organic spinach, spices, cheddar cheese, and homemade verde sauce (tomatillos, avocados, spices, yum!)."

And that's how the ball started rolling.  We're pairing them this week with some crunchy veggies - carrots, broccoli, etc - and our Homemade Cilantro Ranch for a healthy side that kids will actually eat!

Plan ahead for other busy and cold winter nights with some tasty Booyah BBQ Stew - a TexMex version of the Southern classic Brunswick Stew (whenever I hear the name Brunswick Stew, I flash back to a Fisher Price Bowling Alley set I had as a kid - did any of y'all have one of those, or is it just me?).  Anyway, we love this hearty stew served over homemade Cornbread - it'll warm you up all the way up and down.

Our Sneaky Mac GYTTW meal is very popular with parents because of its sneaky ingredient - cauliflower!  It's tasty but subtle, so there's no need to mention how healthy it is to your dinner-mates, whether young or old.  Paired with an easy salad, this is a great, fast weeknight dinner!

That's what we're making this week amigos - we'll hope to see you on your porch this Tuesday!

    Adios,

    Tuesday, November 11th:  Southern Happiness!
    (Dinner for 3-4 $35, Dinner for 4-6 $45)

    Main Meal Includes:
    Company Shrimp & Cheese Grits
Arugula Salad with Dried Cranberries & Pumpkin Seeds with Lemon Vinaigrette
    Rosemary Bread
Optional Kids' Meal:  Mini Chicken & Cheese Burritos ($6)
Optional Extra:  Southwest Pockets with Homemade Cilantro Ranch ($10 for 4)

    GYTTW Meals:
Mamacita's Roasted Pork & Avocado Tortilla Soup Dinner $30
Mamacita's Roasted Portobello Mushrooms & Avocado Tortilla Soup $30
    Bacon Cheeseburger Casserole $25
Three Amigos Package:  Chips with Salsa, Guacamole & Mimi's Queso $10

Many moons ago, whenever we first started Dinners on the Porch, I said to Alex that we would "never" make Shrimp & Grits for a DOTP meal, since there are already so many great restaurants making this Southern classic really well.  My theory was that we should just stick with what we could do well and leave the rest of it alone.  However, like almost always happens when I say "never," I changed my mind.  I found this recipe that looked irresistible, changed it just a tiny bit to add extra bacon (why not?), and the rest is history.  We've been selling Company Shrimp & Grits for a while now, and people really love the freshness of the Shrimp roux - it's light and lemon-y, with mushrooms and chopped green onions and, of course, lots of shrimp.  The Grits are so tasty that they are a great stand-alone dish - cheesy and savory and never bland.  You combine it at home for a perfect dinner that's nice enough for Company but a real treat for family dinner.

In keeping with the elegant nature of this week's dinner, we're including a fancy, fresh Arugula Salad with Lemon Vinaigrette that will be a nice light complement to your hearty Shrimp & Grits.  Serve it all with some delicious toasted Rosemary Bread and dinner is served to happy applause from all!

Now that the weather has turned decidedly cooler, hearty soups are an excellent dinner, and our Mamacita's Tortilla Soup is an all-time DOTP favorite.  It's a little spicy, very flavorful, and comes will lots of toppings - rice, cheese, sour cream, chips and green onions - to make it just the way you like it.  I like it with all of that, but if you're more of a purist, I'm okay with that too.  Just do your thing, eat your soup and we'll all be happy at the end of the day.

Although our Bacon Cheeseburger Casserole is, admittedly, much less fancy fare than your Main Meal dinner, it's actually really good as well.  I'm not going to use the term "helper" here, but if you start from scratch and make a really good macaroni casserole using all-natural ingredients, it's hard not to love it.  Sure, there's an element of this kind of casserole that feels like 1979, but in a good way that your kids will love (and you'll love not having to make dinner - lucky you!).

Just for fun, we're adding an optional Three Amigos this week for y'all to make any meal much more fun.  It might be a weeknight, but an appetizer will make it feel like a party at your house.  Even if you're eating it while hollering at someone who won't do his homework.  That kind of party!

Have a great weekend y'all.  We are looking forward to seeing you on your porches on Tuesday!

Tuesday, October 28th:  Halloween is a Scream!
    (Dinner for 3-4 $35, Dinner for 4-6 $45)

    Main Meal Includes:
Still-Beating Hearts Jumbo Stuffed Shells with Sausage or Mushrooms in Fire-Roasted Marinara)
Vampires Beware!  Herb Focaccia Garlic Bread
Alien Invasion Green Salad with Homemade Italian Dressing
Optional Kids' Meal:  Snakes & Eyeballs Spaghetti & Meatballs ($6)

    GYTTW Meals:
    Chipotle Chicken Taco Pack $25
Booyah BBQ Pork Stew Dinner $25
Roasted Pumpkin Vegetarian Chili Dinner $25

Why not make the whole week ahead a fun Halloween celebration?!  I will admit that I'm not a big Halloween person.  I don't not like it or anything, but I just can't ever seem to get organized for it ahead of time.  I never let my kids decorate the house - due to the fact that if we did, it would still be decorated for Halloween at Easter, and I'm usually the one at Walgreen's the night before Halloween buying the last bag of candy on the shelf.  However, I feel like planning a few Halloween-oriented family dinners this week would be a step in the right direction.  Of course, this week's dinner is actually just a normal - albeit delicious - meal, but injecting a little Halloween spirit will just add to the enjoyment!

We've been making these awesome Stuffed Shells for a long time, and people always tell us they love 'em.  We stuff our shells with fresh cheeses, spinach, seasonings, and delicious Italian Sausage.  They are nestled in our fresh & flavorful Fire-Roasted Marinara, topped off with cheese, and are a perfect pair with a nice glass of red wine.  Or a pile of Halloween candy.

We can't think of a much better companion to our Shells than a healthy, fresh Green Salad with fresh chopped veggies and great dressing.  Warm up the lovely Herb Focaccia Bread to soak up that great sauce, and dinner is perfect!  There's a pretty good chance your whole family is going to eat up this meal in record time, so you'll have extra time to work on those costumes & fancy spiderwebs I keep seeing in other people's yards.

For the rest of the week (& month - can you believe it!?), you'll be all set for quick & delicious dinners with our Get You Through the Week Meals.  The Chipotle Chicken Taco Pack is fun & easy to prepare family-style in no time, with tortillas, cheese, Smoked Chipotle Chicken & taco toppings!  Taco Packs are a great meal to leave with a babysitter, or to let an older child prepare for the family - always good to move toward every parent's ultimate goal of independent kids!

The Booyah BBQ Stew & Cornbread Dinner is amazing and always popular.  It's a super-hearty stew, loaded up with pork, beef, chicken, corn & beans.  We think this might be the perfect pre-Trick or Treat dinner, since it's warm, fast, delicious & filling (maybe we'll all be less temped by the mini Butterfingers?).

Our Pumpkin Vegetarian Chili is also a great plan for dinner - made with roasted pumpkins & lots of veggies and beans, you'll be going back for more with no feelings of guilt at all!  Enjoy and feel good at the same time - so nice!

That's what we're working on for y'all this week, and we hope you'll enjoy it!  Can't wait to see you & all your little gobblins on the porch this week!

Tuesday, October 14th:  Three Chili Dinner - your choice!!
( Dinner for 3-4, choose 2 kinds $35 or Dinner for 4-6, choose three kinds, $45)
Texas Red Chili with All-Natural Grayson Farms Beef
White Chicken Chili with Navy Beans
    Pumpkin & Bean Veggie Chili
Chili Toppings:  Mixed Cheese, Sour Cream, Rice & Corn Bread
Appetizer:  Spicy Corn Dip & Fritos
Optional Add-on:  Salad Pack with Homemade Cilantro Ranch Dressing $10
Kids' Meal:  Rice with Baked Chicken & Small side of Queso
Get You Through the Week Meals:

    • Southwest Chicken Pie $30
    • Goat Cheese Lasagna with Italian Sausage $30
    • Goat Cheese Lasagna with Butternut Squash $25
We're excited about a chance to eat Chili, and we're making it even more fun to do by letting you pick two or three kinds to try!  There will be something for everyone, and probably leftovers.
The Texas Red Chili is meaty with just a hint of spice - we of course add Texas Pete liberally to ours, but not everyone enjoys burning up their internal organs like I do!  There are, needless to say, no beans.
The White Chicken Chili is always a favorite, with roasted white meat chicken, veggies & navy beans.  It's a soothing and tasty soup that you'll want seconds of - for sure!
Our Pumpkin & Bean Veggie Chili is made with pumpkins right from the Hoots pumpkin patch - so fun!  Alex has been roasting them with great success, so if you don't feel like going to the trouble yourself - hello! - let her do the work for you!  The Chili is a bit spicy, with tons of veggies & flavor.
You'll have fun filling your chili bowl with all sorts of good toppings - warm rice, cheese & sour cream, and even corn bread.  So tasty!
We're also sending along a fun appetizer that we've been serving all the time at catering events now - it's a creamy dip with corn & chopped veggies.  It's great hot or cold, and we always think that a little tasty appetizer can make Tuesday dinner feel like a Friday - fun!
Add on a Salad Pack if you're wanting to round out the meal a little bit - I always like a salad, but you know, I was voted out by the Corn Dip lovers (and usually by my family as well!).
You may end up with a little leftovers for lunch, but I know you'll be happier if you've got some back-up meals lined up for the rest of the week.  Our Get You Through The Week meals are some of our very favorite.  The Southwest Chicken Pie is a sort of fancy-looking affair, with a pretty braided puff pastry crust over a bottomless pie of chicken, beans, peppers, cheese & corn in a homemade sauce.  So it's fancy-looking, but you'll want to chow down on it with a big spoon, which is not really so fancy.  It won't bother us a bit if you do that, so whether you're proper or not, you'll have a great dinner!
The Goat Cheese Lasagna is amazing & has often been said to be "the best lasagna" many folks have eaten.  We don't like to brag and all, but we do think it's pretty awesome.  A great lasagna is also one of those things that works for family dinner, a weekend dinner party, as a gift meal, or a take-along to a party.  It's the Meryl Streep of the casserole world.

We hope y'all will join us for a big & tasty meal this Tuesday - all of us at our own houses, but sharing a community of food & family that we've really grown to love!

    See you on the porch,

Tuesday, September 30th:  Perry's Warm Salad Special!!
    ( Dinner for 3-4, $35 or Dinner for 4-6 $45)

House-roasted Brisket or PortobelloWarm Veggies:  Rosemary Roasted Baby Red Potatoes, Red & Green Peppers, Purple Onions, Yellow Squash & Broccoli
Homemade BBQ Cilantro Ranch Dressing & Croutons
Fresh Dinner Rolls & Honey Butter
Kids' Meal:  Orzo with Homemade Marinara & Mozzarella ($5)

Get You Through the Week Meals:

    • Queso Beef Enchiladas with Mild Red Chile Sauce $25
    • Sneaky Mac & Cheese with Smoked Chicken $25
    • Indian Spinach & Cheese Enchiladas with Mint Cilantro Sauce $25
    • Breakfast Egg Strata with Cheese $25
    • Breakfast Egg Strata with Neece's Sausage & Cheese $30

So, I have been accused of having strong opinions - sometimes perhaps too strong - about certain things.  Sometimes it gets me into trouble, but it's hard to be less opinionated when you tend to be that way.  Like, if I really like something, I can't stop telling people about it, and if they don't agree, it makes me real sad (and maybe a little angry).  I would never be angry at any of you - of course - but I am going to share my opinion with you that a giant & hearty warm salad for dinner is the best dinner ever.  I actually don't even feel like that's an opinion; it's more of a fact.

Anyway, this Warm Salad Special is something we've been making for a long time & it just keeps getting better as we add in different flavors from time to time.  This time we're doing it with a Texas flavor - warm roasted brisket and the BBQ Ranch dressing mixed with fresh vegetables & potatoes - it's pretty close to perfect.  If you've got folks in your crew that don't like certain things, it's easy to separate the parts and make everybody happy.  Rounded out with warm dinner rolls & honey butter, you'll have a healthy & fun dinner that cover all the bases!

In order to get through the week, we think it's so smart to stock up on healthy and tasty meals that can be whipped up anytime you need a hand.

The Queso Beef Enchiladas are very tasty & family friendly - plus we always believe that adding Mimi's Queso to anything is a major bonus.  The Enchiladas are made with seasoned All-Natural Grayson Farms ground beef, cheese & beans, then you'll add delicious, mild homemade Red Sauce & Mimi's Queso when you bake the dish.  There's no going wrong here!

Our Sneaky Mac & Cheese is as delicious as it is stealthy.  Our secret is pureed cauliflower - you can keep that to yourself if you'd like - and then we add lots of cheese & natural ingredients (no powdered items, we promise!).  It's good on its own, but with Smoked Chicken, it's amazing & a great main dish dinner.  Pair it with a salad and you're all set on a busy weeknight!

Indian Spinach & Cheese Enchiladas may sound strange, but they are so delicious!  They are so fresh & unexpected, with a sauce made with sour cream, mint & cilantro.  These are vegetarian enchiladas that will make meat-eaters think twice (and make vegetarians very happy!).

Finally, if you're planning any sort of Fall morning gatherings - sleep-overs, entertaining weekend guests, or mountain get-aways, make sure to grab a Breakfast Strata.  They are delicious & so easy to feed a group without the hassle of lots of pans & mess in the kitchen.  They travel very well, so it's a great dish to take along on weekend trips.  We also like them for a "Breakfast for Dinner" meal - just pair with chips & guacamole and it's a Tex-Mex dinner that's easy and yummy!

That's what we're working on for you at DOTP this week y'all.  Just email your order to dinnersontheporchorders@gmail.com, and we'll have that on your porch on Tuesday!

Here's to a great Fall weekend in our beautiful city!

As I have discussed over the many years we've been together, family dinnertime is not easy for me.  The stress of it was probably the central reason I started Dinners on the Porch, and even though one would think I might have it together by now, the opposite it true.  It's even worse.

Let me break down a recent afternoon in our family for you, to illustrate why Taco Night is, in fact, really a good idea for all of us.
    • Leaving The Porch at 3 pm, I pick up two of my three children from school and bring them back to The Porch, where they run back and forth through the kitchen in danger of being stabbed by sharp knives or burned by hot pans.  All of the employees really enjoy having them there.
    • My husband  Matt arrives at 4:15 to rush Gus off to a guitar lesson, while Ruby and I jump in the car with an employee to drop off a catering meal.  We drive directly behind Matt and Gus all the way up Robinhood to Peacehaven.
    • Ruby and I drop off the stuff for the catering and turn around to pick up the oldest child from sports, then rush him back up Robinhood to his guitar class.  We proceed to TjMAXX (which letters are capitalized!!??  who is TJ Maxx?) to buy a shirt for Finn to wear to his 6th grade dance, since his only button-down shirt now comes halfway up his forearms, which he does not mind but which feels like an F in parenting.  Leave TJ MaXX (?) with all of the available shirts from the clearance aisle and so many lollipops that Ruby put in the cart near the checkout line.
    • We go next door to Lowe's to pick up something for dinner, since I have to be back at school within the half-hour for our third (and blessedly final) Parents' Night of the month.  At this point, my mind has stopped functioning properly, and I don't have the resistance to forbid Ruby (5 years old) from pushing around the children's cart behind me, so am continually yelling at her to stop running it into the back of my ankles.  I finally give up - we leave Lowe's with absolutely nothing in the cart because I realize that I have zero time to put anything together before I have to be back at the school.
    • All of us arrive back at the house at the same moment, and while I hastily throw back a modest glass of red wine and spray on perfume - want to make sure I seem fresh & relaxed! - Matt begins searching the fridge for anything plausible for dinner.

All of the that may illustrate to you that I should probably try to simplify my life, but as you may know, that's easier said than done.  For the time being, I'm thinking it's going to work best to start with trying to simplify dinner.

This week's DOTP Chipotle Chicken Taco dinner is simple, easy, delicious and perfect for a variety of people who may all like and dislike different things (otherwise known as a family).  You'll just heat the various components and then let everyone build their own tacos (or create a taco salad, a rice bowl, a burrito, or whatever crazy thing they like!).  It's a perfect way to get a great dinner on the table and truly enjoy the meal together.  Order a Three Amigos for a little extra fun for dinner!

If your weeks are anything like mine, you'll want to stock up on Get You Through the Week Meals on Tuesday!  Our whole family loves Jumbo Stuffed Shells - they are a nice variation on a staple of our dinner table - spaghetti - and it's a fun way to introduce something "new" that still tastes familiar enough not to raise suspicions with anyone prone to food rejection issues (that's a nice way of saying "picky kids").

The Quinoa Kale Bake is a very tasty, yet elegant dish that's great for a healthy & easy meal.  Like many bakes, it is great as a left-over for lunches.  Quinoa is, as you may have heard, a great super-grain loaded with protein, and it's also gluten-free, so it's a great choice for health reasons as well as just being good.

There are not many things that make me happier on a hectic weeknight than a dinner that practically serves itself, and this is one such dinner!  Now that school has started & we're full-swing back into commando parenting (complex, kid-moving operations, not related to whether we're wearing underwear (which we are)), it's imperative to have a solid plan.  Gone are the lazy days of figuring out dinner at 7, eating at 8 and watching movies 'till the kids fall asleep on the couch.  I miss you, Summer!  Luckily, this tasty dinner is a really good plan - as well as a really good meal!

We have been making this yummy Rosemary Red Pepper Orzo since we first started DOTP - and long before, actually - and it never gets boring.  We start with all sorts of seasonal, fresh vegetables, mix in the chicken & pasta and dress it with homemade Rosemary Red Pepper Sauce and serve it warm or cold.  Every time we make it it's a little different, depending on what's in season & what looks good.  And happily, over the years, we have heard back from many parents reporting that their kids really love this veggie-heavy dish - and we think that's pretty cool!

Because it's always nice to have something tasty to get your mind & taste buds ready for dinner, we love to start of the meal with our Homemade Lemon Tahini Hummus & Pita Chips.  I eat so much hummus that it finally became economical to make it (or get Alex to make it!) instead of buying it, and I'm so glad I did!  She's worked on this recipe until it's pretty perfect - the light flavor of lemon, tang of tahini, paired with the salty pita chips - heaven!

And of course, I am a big fan of starting every meal with a great salad, and a Green Spinach Salad has lots going for it.  You could even use it as the base for your orzo pasta, pick the cucumbers out for picky eaters, or just toss it up and have it along with all the other good things!  It's a win-win.

After Tuesday, you'll need a good game plan to Get You Through the Week (GYTTW), and we've got two great casseroles to help you do just that.  They might also come in handy if you owe someone a meal, need to bring something to a party, or just like to be prepared!

Our Kale Pesto Pasta Bake is a healthy version of something you might have eaten as a kid, so it will be as comforting as it is delicious & healthy.  We mix pasta with braised kale and sausage or white beans, then toss in a sauce made with Greek yogurt, homemade pesto (no nuts!), cheese & seasonings.  Bake it up, pair it with a salad or some good bread, and you're ready for dinner in no time!

Pie in the Sky Tamale Pie is an old favorite that is probably not like anything you ate in the 70's, but it's yummy nonetheless.  It's a casserole that is layered with corn tamale mix, Grayson Farms Natural Beef or Boca, black beans, mild green chilies & tomato, cheese & really good seasonings.  The whole thing is baked and then enjoyed immensely by adults and children alike.  It can be spiced up with salsa and hot sauce, cooled down with sour cream, and texturized by crunching up chips on top, so we’re including all of those to get you started.  You might want to add extras from your own fridge, like black olives, green onions, jalapenos – the sky’s the limit!

That's our very tasty menu this week y'all!  Last week went really well, so I'm happy to report that we are all-systems go for DOTP!  Let us know what you'd like by Sunday night & we'll have it all on your porch on Tuesday!

    Love to all,
Claire & all of us at Dinners on the Porch

    Tuesday, September 9th:  Welcome Back!
    ( Dinner for 3-4, $35 or Dinner for 4-6 $45)

Rio Grande Chicken Enchiladas Verdes or Sweet Potato & Black Bean Veggie Enchiladas

Fresh Raw Veggies & Homemade Cilantro Ranch Dressing
    Chips & Homemade Salsa
    Kids' Meal:  Chicken Quesadilla $5

Get You Through the Week Meals:

Goat Cheese Lasagna with Italian Sausage or Butternut Squash $30
Cowboy Meatballs and Killer Tomato Mac & Cheese $30
Extra pans of Chicken or Sweet Potato Enchiladas for your freezer, $25 each

So, in full disclosure, we spent the past weeks talking seriously about whether we could actually "do" Dinners on the Porch now that The Porch is so busy, but even thinking about not doing it was too sad for everyone, so, as usual, we're throwing caution to the wind and jumping in with our favorite DOTP dinner of all.  Welcome back everybody!

It's funny for me to think about Dinners on the Porch in terms of traditions, since it seems completely impossible that it's been FOUR years since we started, but the fact of the matter is that starting every year of DOTP with our Rio Grande Enchiladas is a tradition by now!  For some of you who have been with us from the early days, when Alex and I would stay up all night packing bags of chips and then head out the next day to drive meals around Winston, you may not have any idea how much a part of our lives you've become over the years.  Even if we've never met you, we probably know if you don't like olives or whether you have a dog, or if one of your kids hates beans.  Also in these years we've seen you have babies, get married and divorced, move, send kids off to college, remodel your kitchen, get hired & fired, lose loved ones and celebrate lots of wonderful moments.  You're our people, and we really can't thank you enough for all you've done to keep us going.  Telling your friends, taking our dinners to neighbors, and making sure your book clubs and moms' groups were all on "the list" has built up a huge DOTP community one at a time, and I think that's pretty amazing.

Okay, so back to food stuff here!  If you haven't had our Rio Grande Enchiladas yet, you're in for a treat.  If you have had them, just click on over to your email and let us know how many pans to send!  We hand-roll big old tortillas filled with white-meat pulled chicken, black beans, spinach, salsa, cheese & lots of good seasoning.  Then we cover them with our awesome Ninfa's Green Sauce - a slightly spicy (we promise!) avocado sauce & Mimi's Chile con Queso.  You bake 'em and enjoy them - we're predicting lots of members of the clean plate club at your house!

Since no one likes to have just on thing for dinner (unless it's pizza), we always like to send along sides and munchies, and we think starting your meal with chips & our Homemade Salsa and then munching on lots of nice fresh veggies & Homemade Cilantro Ranch dip will round out the meal perfectly!  If you've got any little (or big) folks at home who prefer things a little less exciting, we're happy to send along a Kids' Quesadilla for you as well.

A long time ago, when we decided to start offering Get You Through the Week Meals, one of the first things we offered was Goat Cheese Lasagna, on the premise that everyone likes lasagna, but it's a hell of trouble to make a good one at home, since it requires so many ingredients and gets all of your pots and pans dirty making sauce and cooking meat and mixing up the ricotta filling.  But on the other hand, eating a frozen one is usually a pretty sad experience.  The inspiration for the recipe came from my friend Mary Lynn, who cooks great dinners for her family every night & will often make an extra of something difficult for the freezer or a friend.  That's pretty smart, in my opinion, and she had this great recipe for lasagna, so we tweaked it a little, threw in some extra love, and here we are now.  People love this lasagna, and we really try to keep it in stock at The Porch, but it's impossible.  So here's your chance to get one or two in your freezer!

We always like to keep things easy, so we're also offering a very friendly dinner for busy families - Cowboy Meatballs & Killer Mac & Cheese.  We can't think of anything better at the end of a busy day than bringing folks together at the dinner table with great big BBQ meatballs & homemade Mac & Cheese - comforting & so delicious!  If you must, you can throw a nice salad on the table too, but we'll never tell if you just put those pans on the table and enjoy the noise of happy people eating.

So, that's what we're putting on the table (or your porches) this week - we hope you'll enjoy it & come back for more.
